Cheeseburgers are about as all American as you can get but I decided to give this one a bit of a French twist by adding cognac, dijon mustard, shallots and a good amount of butter!

Ingredients

  • 1 lb. 80/20 ground beef
  • 2 tablespoons butter
  • 1/4 teaspoon fresh ground pepper
  • 1 teaspoon sea salt
  • 1/4 teaspoon minced garlic
  • 1/4 teaspoon finely chopped shallots
  • 1/3 cup cognac
  • 1 tsp. Dijon mustard
  • About 68 strips of bacon {thick cut}
  • 1/2 cup of cheddar cheese {or any cheese of your choice, blue cheese would work well for this recipe but i was all out}

Instructions

In a large mixing bowl break up your ground beef and mix in all the ingredients {except the bacon and cheese}.  Divide the meat up in 4-6 equal portions and form patties. Once your grill is pre-heated place your bacon on the top rack and brush a little bit of vegetable oil on the area where you are going to grill your burgers. Grill your burgers to the desired temperature once your bacon is done add a few pieces to each pattie and sprinkle on your cheese. Serve on buns and add your favorite toppings.
