Welcome to the newest contributor to my blog- my mom. She’s a great Southern cook and this recipe proves that. I associate Cheese crisps with Southern entertaining and throwing baby and wedding showers, but they’re also good for just anytime. What is different about this recipe is the blue cheese and the added rice krispies for added crunch. My mom is a great cook and entertainer and she learned from the best- her mother and grandmother. To honor that tradition, I’ve also included my great grandmother’s Cheese crisp recipe. This is a more traditional take on a cheese crisp, similar to a “cheese straw”.
And to answer your question, no I have not yet tried to make these on the grill .
I’m sure it can be done though!
<strong>Ingredients:</strong>
<ul>
<li><span style=”color: black; font-family: ‘Book Antiqua’; font-size: medium;”>1 stick butter, at room temperature</span></li>
<li><span style=”color: black; font-family: ‘Book Antiqua’; font-size: medium;”>1/2 cup extra-sharp cheddar cheese, finely shredded</span></li>
<li><span style=”color: black; font-family: ‘Book Antiqua’; font-size: medium;”>½ cup blue cheese crumbled</span></li>
<li><span style=”color: black; font-family: ‘Book Antiqua’; font-size: medium;”>1 cup all purpose flour</span></li>
<li><span style=”color: black; font-family: ‘Book Antiqua’; font-size: medium;”>¼ teaspoon cayenne pepper</span></li>
<li><span style=”color: black; font-family: ‘Book Antiqua’; font-size: medium;”>½ teaspoon salt</span></li>
<li><span style=”color: black; font-family: ‘Book Antiqua’; font-size: medium;”>1 cup Rice Krispies cereal</span></li>
<li><span style=”color: black; font-family: ‘Book Antiqua’; font-size: medium;”>1/3 – 1/2 cup finely chopped bacon bits</span></li>

Directions:
<span style=”color: black; font-family: ‘Book Antiqua’; font-size: medium;”>Preheat oven to 350. In a medium bowl, mix together the butter, cheese, flour, cayenne and salt until it forms a ball stuck lightly together. (You can use your hands or a wooden spoon. There shouldn’t be any ingredients at the bottom of the bowl.)</span>
<span style=”color: black; font-family: ‘Book Antiqua’; font-size: medium;”>Fold the cereal into the dough. Pinch off quarter size balls and roll tightly between your hands. Place them about an inch apart on an ungreased baking sheet. When all the balls are rolled, flatten each one with the tines of a fork. Bake 15 minutes.</span>
<span style=”color: black; font-family: ‘Book Antiqua’; font-size: medium;”>Cool the crisps 5-10 minutes before removing from the pan and serve. Store the leftovers in a tin up to 1 week. Makes about 2 dozen. Double the recipe and give some away. My dad really likes these treats.</span>
