You know how much I love giveaways, so we’re giving away Outdoor Gourmet Cedar Planks and Skewers courtesy of Outdoor Gourmet. I used these planks in my past post when I was grilling cedar planked salmon with lemon-dill butter and grilled rainbow carrots, which turned out delicious. These planks make whatever you’re grilling smell and taste amazing. I like these planks in particular because Outdoor Gourmet offers sustainably reclaimed cedar, milled close to the forest where it was grown, meaning less consumption of resources and fossil fuels for transport.
So what do you have to do to wins these wonderful grilling accessories? Hey Robyn… I have to confess, I use Outdoor Gourmet products, and have spoken with Katie there a few times. We LOVE the flavor and texture our food achieves when grilled on their products. This said, I’ll offer up a dish we love:
DARK AMBER AGAVE SALMON AND CARIBBEAN FESTIVAL RICE

We basically take a saffron rice packet and add shredded coconut, dried pineapple, diced red and green peppers, and a few drops of the agave nectar from above. Comes out as great companion to the salmon.
LOL… I lost our salmon recipe above – so included it again here…
Coat a skin on salmon fillet with a blend of powered chili pepper, smoked paprika, cumin, garlic, onion, and nutmeg. Drizzle (love that word) a bit of dark amber agave nectar onto the fillet and rub in the mixture. Cover the salmon and set it aside in the fridge for a few hours. We grill it up on an Outdoor Gourmet cedar plank and wow…it turns out more velvety and smokey than you’d ever believe!

Cedar planked salmon may be good but if you get the chance try some cedar planked White Sea Bass! It is so incredible, just a little lemon pepper, some butter and I like some Dizzy Pig Raging River rub on mine as well. The fish almost tastes buttery on it’s own but a little brush of butter while it’s on the grill makes it even better. Just don’t over cook it!

Though I would love to do salmon or some type of fish… something a little different might be the way to go. I would probably do something like a cedar planked honey spiced chicken. A mix of honey, balsamic, dijon.
Or, better yet, what about a stuffed chicken breast grilled on the cedar plank? Stuff it with a mixture of pesto and cheese…cream cheese!!!
Amazing but true: green beans with walnuts, mushrooms and blue cheese!!

Because some people have trouble with lamb I’d probably want to give some chops a try. A little salt & pepper and then plank until medium rare. Something simple…

I think I would make something different than the normal fish. For the plank, I’m thinking a pork tenderloin and since it would be indirect heat, use a spicy-sweet glaze. Maybe something with some soy, mirin, garlic, ginger, lemongrass, and brown sugar. For the skewers, I’d do an easy side of sweet bell pepper, pineapple chunks, and some kind of a hot chile that were soaked in spiced rum before grilling. Serve it all up over a bed of sweet jasmine rice and top with cilantro.
I don’t care for Beef or Chicken on cedar planks as they need the quick sear on the grill to lock in their flavor. I prefer a more delicate protein like scallops or stuffed flounder w/ a teriyaki glaze to finish, rice pilaf & some fresh steamed broccoli, Bring it!!
