“I think I would make something different than the normal fish. For the plank, I’m thinking a pork tenderloin and since it would be indirect heat, use a spicy-sweet glaze. Maybe something with some soy, mirin, garlic, ginger, lemongrass, and brown sugar. For the skewers, I’d do an easy side of sweet bell pepper, pineapple chunks, and some kind of a hot chile that were soaked in spiced rum before grilling. Serve it all up over a bed of sweet jasmine rice and top with cilantro.”
