It’s been a pleasure to work with McCormick’s on the This Week In Grilling facebook campaign. McCormick’s offers an annual Flavor Forescast and this year they presented us with the Grilling Edition. For the This Week in Grilling campaign, each blogger highlights a flavor trend and shows how to incorporate this into a recipe on the grill.
For This Week in Grilling, I showed viewers some basic techniques on how to grill seafood. For grilling seafood, it is really important to remember to: 1) use a well oiled grill pan so the fish can’t slip through the grates 2) oil the fish with olive oil so it doesn’t stick to the grate.
I incorporated a “baja fresh” flavor into my tacos by marinating them in McCormick’s Mexican Fiesta Marinade. This marinade has flavors of lime, onion, garlic, peppers and cumin offering a virtual party in a packet.
Grilled fish tacos are a perfect meal for a quick and easy backyard fiesta. Make a “build your own taco bar” by putting out all your condiments for guests to pile on as they choose. As they say down South, “vamanos fiesta” or “let’s party!!”. At least I think that’s how they say it LOL.

I used the Grillmates Mexican Fiesta on chicken and it was very good. Seems like a natural for fish.
Fun video, Robyn. I just recorded my first two video recipes and it was painful. I hate not having the control over the situation that I do with still shots (noises in the background, my line flubs, etc). You seem like such a natural, any tips for a beginner?
Also, what editing software are you using for vid post production?
